A Child's Imagination


A child's imagination is indeed a very beautiful thing. I enjoy more than anything watching my son Ronnie play. He has an amazing imagination. I love it.

Cherry Devil Food's Cake

Yummy! Who doesn't love chocolate cake? 



I did a blog post the other day about an Apple Spice Cake . Which was oh so yummy. And only took 2 ingredients. Yes, just 2. Well this yummy Cherry Devil Food's Cake only takes 2 ingredients as well. Now, this cake doesn't have a strong taste of cherry, so if you are looking for that, you might add some cherry flavoring. Just a thought.

After making the Apple Spice Cake , I decided that I must experiment more with the 2 ingredient cakes. Yes, I just must! :) I had a can of cherry pie filling and bought a box of devil food's cake mix. 

These are the ONLY ingredients you need for this cake! 

I always try to take the healthier route, so I go for sugar free products when I can. You don't have to use sugar free, I'm sure the other would taste good too. :) 

Now, my son isn't a fan of texture changes while eating his food, due to some sensory issues. So like the last cake, I blended the cherry filling until it was all chopped up! :)

Once completely blended, I then mixed it with the cake mix. Again, I did NOT use anything the box calls for, eggs or oil. Just the cake mix. Once the cake mix and cherry filling is mixed together bake it at 350 degrees for about 30 minutes. I just used a 13X9 cake pan. 

He approved of the cake. Sorry that the picture is somewhat blurry, he's faster than me! :) 

According to the Recipe Calculator at Sparks Recipe 
this cake only has:

140.4 calories
     3.5 g fat
     2.3 g sugar

per serving. Makes 12 servings.

Faith and Dreams

Apple Spice Cake

One word to describe this. Yummy! :)

I love desserts. I mean, who doesn't though? However, I'm always on the hunt for healthier ways to make desserts. So what did I do? Like any other woman (or man) on the hunt for a recipe, I turned to Pinterest. Such an addicting site, right? :)


I had come across a recipe that called for a box of Spice Cake Mix and 1 Can of Pure Pumpkin. I instantly got excited because I just knew I had a can of pumpkin. Well, I had pumpkin pie mix and all the recipes that called for those two ingredients said not to use that. I probably could have, but didn't want to chance it. So, I turned to my cabinet and spotted apple pie filling.

This is all you need. Yes, just these 2 ingredients. 





I blended the apple pie filling up until it was the consistency of apple sauce. My son is not a fan of texture changes while eating, so I figured this way he would be more likely to try it. :) One the apples were finished blending, I added that to the spice cake mix. I mixed with a whisk, obviously you can use a mixer. :)



 Again, these are the only two ingredients I used. The box of cake mix and the apple pie filling. My husband was surprised to learn I didn't use the eggs or oil that the cake mix called for. Once your apple filling and cake mix is well blended, pour into your cake pan! I used a 13X9 cake pan.

I baked the cake at 350 degrees for approximately 30 minutes. I checked it at 20 minutes and decided on the extra 10 minutes. Just keep an eye on it.
 


The true test of whether or not this cake was a success, having my son Ronnie taste it. As you can see, he had no problems cleaning his plate! Hey, that's saying a lot for this VERY picky eater! :) Now, I just need to sneak in some carrots next time! ;)

As of right now, I'm on a search for a healthy, but tasty cream cheese frosting for this cake. I personally could eat the cake without it, but the hubs likes frosting! :)

According to the Recipe Calculator at Spark Recipes there is only:
182.5 calories
    3.0 grams of fat
      .3 grams of sugar

per serving. This makes 12 servings.

Father's Day

I hope all the Dad's out there had a wonderful Father's Day. Our son Ronnie loves to paint and what's better than a homemade gift? Nothing, especially when it's made by your child! So Ronnie made this painting for his Daddy for Father's Day! :) 


After Ronnie gave Daddy his present, he decided he wanted to sit down and paint with Daddy. So the boys picked out what colors they wanted to use and got down to business. :) 

 
When it comes down to me and my husband, I am the craft lover. So it was nice to see him and Ronnie sit down together and paint. I even let him wear my painting apron. I told him to feel special, because I'm the only one who gets to wear that! ;) 


The boys finished artwork. Ronnie ended up putting the brush down and went to painting with his hands. 





And lastly, the boys hung up their artwork! :) It was a great little Father's Day craft project.
